Pozole

A traditional hearty brothy soup or stew from Mexico.  Savory chicken broth, hominy (maize kernels), shredded chicken (white meat) and pork , served with its traditional garnishes (guajillo chili salsa, shredded lettuce, chopped onion, radish slices, lime and crispy corn tortillas/tostadas).  This soup is a well-known cure for hangovers and is often eaten in the wee hours of the morning as a preventive.

Taco de Mole

("MOLE"-lay) Hot soft corn tortilla loaded with lean pulled pork in a mole Poblano sauce.

The state of Puebla in Mexico is identified with mole Poblano. It contains about 20 ingredients including chili peppers and chocolate, which works to counteract the heat of the chili peppers, but the chocolate does not dominate.  It helps give this delicious sauce its dark color.

Taco de Cochinita Pibil

Traditional pork dish from the Yucatán Peninsula of Mayan origin.  3 soft corn tortillas stuffed with slow roasted pulled pork shoulder that has been marinated in achiote paste, spices, orange & lime and wrapped in banana leaf.   Toped with pickled red onions and habanero pepper.

Taco de Tinga

A dish that originated in the city of Puebla, Mexico.  Stewed shredded chicken breast cooked in a combination of tomatoes, onions, garlic and smoked chipotle peppers loaded on 3 soft rolled corn tortillas avocado wedges, queso fresco and cilantro.
